ISSA Sweet Potato Pie Recipe
Hey Ya’ll! I know it’s Fall and all. And pumpkin spice is still on everyone’s mind. BUT it’s now November and the holidays are literally around the corner. Soooo I thought I’d share my favorite pie recipe. Issa Sweet Potato Pie Recipe!
Now I’ve been using this recipe for years now, making adjustments along the way to get the taste that I wanted. It’s hilarious to think that when I first started experimenting with these, that I thought you only needed sweet potatoes to make them…I know, don’t laugh too hard at me.
But these days, my pies are full of flavor, spices and every thing nice :)! So head to your cabinets or to the store to pick up what you need to make this ever so sweet and yum pie for the holidays!
Ingredients
- 3 Large Sweet Potatoes
- 2 Regular Dish Pie Crusts (frozen)
- 3/4 cups Brown Sugar
- 1/4 cup Sugar
- 1 teaspoon Vanilla
- 1/8 teaspoon All Spice
- 1/8 teaspoon Nutmeg
- 1/8 teaspoon Ginger
- 1/2 teaspoon Cinnamon
- 1 cup Sweetened Condensed Milk
- 2 beaten Eggs
- 1 pinch Salt
- 1/2 stick Butter melted
Instructions
- Preheat oven to 350 deg F.
- Fill large pot with water and place on stove at high.
- Once water boils, place sweet potatoes in and cook for 45 minutes or until tender all the way through.
- Drain water from pot. With a knife, cut the skin of the potatoes horizontally all the way around the potato in thirds. Note: You will then be able to pull the skin away, leaving only the sweet potato pulp.
- In a large bowl, add potato pulp and mash the potatoes until large lumps are not visible.
- Add all other ingredients in with the potato pulp.
- Using a mixer, blend ingredients for 3-4 minutes or until smooth consistency.
- Pour the filling into the pre-made frozen crusts.
- Place pies into the oven and bake for 1 hour.
- Remove and enjoy while warm with family and friends!
