I love Italian food and one of my favorite dishes is Farfalle Alfredo from one of my favorite restaurants Biaggi’s. At Biaggi’s, the dish includes grilled boneless chicken, red onion, peas, prosciutto and roasted red pepper in an alfredo sauce. I prepared a very simplified version of the Farfalle Alfredo dish for the family.

Farfalle Alfredo

Ingredients:

1 lb grilled boneless chicken tenders cut into small pieces

2 Tbl salt

10 oz farfalle (bowtie) pasta

6 slices of prosciutto, diced (Yum, 1st time cooking this at home)

24 oz Alfredo sauce

1 cup chicken broth

4 Tbl parmesan, grated

1 Tbl parsley

Instructions

Heat olive oil in a large skillet over medium high heat. Add in chicken and cook until the meat is no longer pink (salt/pepper for flavor). Heat olive oil in a large skillet over high heat. Add prosciutto and saute’ over heat for 2-3 minutes. Stir in alfredo sauce, chicken, chicken broth and bring to a boil. Remove from heat, cover and set aside. Prepare pasta according to directions on the package. Add sauce to pasta and toss while continuing to stir over high heat for 1 – 2 minutes. Remove from heat. Place on serving dish and sprinkle Parmesan cheese and parsley and serve immediately.
