Homemade Lemon Squares
Oh sweet Summer Time! Although, it’s not quite summer, our temps are rising here in North Carolina with a lot of thunderstorms and rain. So what to do on rainy days? Cook sweets, of course! I don’t know about you, but I love the taste of citrus in the spring and summer months, like Lemonade and Orangeade. So today, I’m sharing this sweet Homemade Lemon Squares recipe.
I’ve had lemon squares plenty of times at any given pot luck that I’ve been to but had never tried making them myself. They are surprisingly really easy and I had all of the ingredients in the kitchen already…that’s always a plus.
Now of course, this isn’t a new recipe but I used this recipe and adapted it some to simplify and add a tad more sweet. If you like yours more tart, you can decrease some of the sugar levels.
For these homemade lemon squares, the bottom tastes like a sweet cookie and the top tastes like the yummiest sweet lemonade, perfectly summer sweet. So you can imagine that these were a hit with the kiddies. Now here’s the recipe, so that you can give it a try!
Ingredients
- 2 sticks of butter
- 2 cups of flour
- 3/4 cups of sugar
- 6 tbs lemon juice (or 2-3 fresh lemons juiced)
- 1/4 cup flour
- 4 large eggs
- 1 3/4 cups of sugar
- Powdered sugar for garnish
Instructions
- Preheat over to 350 deg F.
- Prepare baking pan by greasing pan with butter or butter spray.
- Add Base ingredients (butter, flour and sugar) to a food processor and pulse until crumbly combined.
- Pour Base mixture into baking pan and spread out evenly. You may need to dust hands or utensil with flour to keep from sticking while spreading.
- Bake for 20-25 minutes, until edges are golden brown.
- With a fork, make several punctures into the base.
- While baking the base, mix Topping ingredients (lemon juice, flour, eggs and sugar) in a bowl using a whisk.
- Pour Topping mixture onto the base.
- Bake for 20 minutes.
- Remove from oven and allow to cool.
- Sift powdered sugar on top for garnish.
